We are pleased to offer a variety black, green and rooibos, plus fruit and herbal teas from The Metropolitan Tea Company.  This company is known for its high quality and unique tea blends, including Canadian Breakfast Blend, Buckingham Palace Garden Party, and Crème au Caramel Rooibos to name just a few.

Simple sugar syrup – use whatever tea strikes your fancy! Around here the fruit and herb teas are the favourite for this, though the rooibos varieties run a close second.

  1. Dissolve 1 cup of sugar in 1 cup of boiling water, then let simmer.
  2. Add 50 grams – 2 ounces – of tea and let simmer 5 minutes, stirring occasionally.
  3. Strain, cool and bottle. Will last in the refrigerator up to 14 days.

Enjoy in icy or slushy drinks, or try drizzling on ice cream, crepes or pancakes. Use your imagination.

Iced Tea Recipe – included on the back of each package of loose tea

6 teaspoons of loose black, green or rooibos tea (or 6 teabags)  Note: for fruit and herbal teas use 12 teaspoons

Add 1-1/4 cups of boiling water, let steep for 5 minutes

Strain hot tea into a pitcher 1/4 filled with ice water, stir.

Sweeten to taste – we use 1/3 of a cup white sugar dissolved in 1/3 cup boiling water in 1 pitcher of iced tea.

Fill remainder of pitcher with ice water.  Serve.  Also very nice next day.
